I boat in the lake of the ozarks.
You need an 8S Danforth anchor and/or (I suggest both) a FX-7 Fortress anchor - each with about 150' of 3/8 rode and 10' of 3/16 chain. This combo would set you up very nice and professional.
Two anchors are nice to have... 1. a second anchor will keep your vessel from "swinging around" when the wind changes direction, 2. a second anchor is good to have if you loose your first anchor.
I have a lake front cabin on Bull Shoals. Used to keep a pontoon boat up there as well, but don't anymore... Great lake, great fishing...

Check out the cool new anchoring system for your pontoon from the Anchor Wizard!
The boat is 24'.
I am anchoring on a lake that is mostly muddy, clay soil. (sandy in some spots)
It's a small lake with calm waters... I don't expect to be out in strong winds.
Any advice on anchor weights? Do I need more than 1 anchor? Should the anchor have a chain on it?
THANKS for all help!
If you plan on fishing, I would get two anchors because if not the wind will constantly turn your boat around. You probably don't need one with prongs on it since you will only be going in a lake, but it might not hurt. I would say that you probably want a 25lb anchor maybe 2, and that would do the trick. You don't need a chain, just use a rope for the anchor plus they are a lot quieter. Get at least 25 foot of rope with it as well, chances are you won't be that deep, but if you are it's nice to have.

Boatin' in Va has a great answer.
For general use the danforth style anchor will work great, has super holding power for the size. The 13 or 14 lb would be my choice too. The little extra weight over a 9 lb gives a lot more security when the hook is needed in a heavy current or high wind.
3 to 4 foot of chain and enough anchor line to anchor properly ( 5 to 7 times the depth) with a 14lb danforth would work great.

Aluminum tubing around internal parts
Just a jerk on the rope drops the flukes leaving mud, sand, and weeds in the water
Features powder-coated casting, zinc-plated loops and eyehooks
What is the best type? I've seen a retractable single tube, a tripod setup, and larger cage styles. We've tried a cage style (4 anchor points) in the past, but the rear wall got in the way. I need something that will get the rope up above the motor. Right now, we're just using the two clip points on the rear corners. This makes the rope drag through the water, is very close to the motor, and makes getting up on a wakeboard pretty difficult. Any ideas?
check out this link. i have used a tripod style in the past that worked very good.

Anchor System for your Inflatable Pontoon Boat | Inflatable ...
If you’re like me, you like to take shorter floats and stop often while river fishing. When I hook a few nice bass in the same spot I like to stop and get some more casts in. Some of the nicer inflatable pontoon boats come with good anchor systems already installed but mine didn’t. My inflatable pontoon came with a light duty pulley, rope, and a mess bag that I ripped on my very first river float. I’m sure this would be fine for a pond or lake where the water doesn’t move but on a river it just doesn’t hold up.
I’m going to show you how I made an anchor system for my inflatable pontoon boat for around $30 using some things I picked up from Lowes.
